What are pork ribeye steaks?

Pork ribeye steaks are cut from the rib and loin area and are valued for their combination of fine-grained meat, natural marbling and flavourful fat. That fat is part of the character of the cut: as it renders, it bastes the meat and helps create a juicy, savoury steak.

Each pack contains 2 x 227g steaks, making it an easy meal for two.

Our pork ribeye steaks are prepared from British rare-breed pork selected for flavour, texture and natural fat development. Exact breed and farm can vary with supply, so we only name a specific source when it is confirmed for the batch.

How to cook pork ribeye steaks

Take the steaks out of the fridge around 30–45 minutes before cooking, pat them dry and season well.

Heat a heavy frying pan, griddle or barbecue until hot. Cook the steaks over medium-high to high heat, turning regularly so they colour evenly and the natural fat has time to render without burning.

Because thickness and equipment vary, use a probe thermometer rather than relying only on minutes per side. For food safety, cook the centre to a validated safe time-and-temperature combination; a simple benchmark is 70°C for at least 2 minutes, with equivalent safe combinations such as 65°C for 10 minutes.

Rest for 5–10 minutes before serving.

Why does pork ribeye have visible fat?

The marbling and natural fat are part of what makes the cut so flavoursome. They soften and render during cooking, helping baste the meat.

Can pork ribeye steaks be barbecued?

Yes. They are excellent over direct heat. Keep a cooler area available so you can finish the steaks gently if they colour quickly.

Do I need to marinate them?

No. Good rare-breed pork has plenty of flavour on its own. A marinade can add another layer, but salt, pepper and careful cooking are enough.

Can I braise pork ribeye?

You can, but these steaks are at their best cooked relatively quickly so you keep the texture of the cut. For long braising, shoulder or collar is usually the better choice.

Can the steaks be frozen?

Yes. Freeze promptly while cold and tightly wrapped, then defrost thoroughly in the refrigerator before cooking.
