Our whole beef fillet is an exceptional centrepiece: beautifully tender, lean and finely textured. Supplied fully trimmed at approximately 2.4–2.7kg, it requires very little preparation and can be roasted whole, used for Beef Wellington or cut into individual fillet steaks. Fillet comes from a lightly worked muscle beneath the loin, giving it its characteristic tenderness and fine grain. How much will it serve?

Remove the fillet from the refrigerator around one hour before cooking. Pat it dry, season well and sear it evenly in a hot pan or roasting tin before transferring it to the oven. For an evenly cooked roast, use a meat thermometer rather than relying only on time. As a guide, remove the fillet at approximately 50–52°C for rare, 53–55°C for medium-rare or 57–60°C for medium. Rest loosely covered for at least 20 minutes before carving. The fillet can also be portioned into steaks. Keep refrigerated immediately after delivery and follow the use-by date printed on the packaging. For best quality, use within one or two days of delivery. Can I cut the whole fillet into steaks?
