What is a boneless half shoulder of lamb?
This is half a lamb shoulder, carefully boned and rolled into a compact roasting joint. Removing the bone makes it easier to carve and helps the joint cook evenly while retaining the rich flavour and natural fat that make shoulder such a rewarding cut.
At approximately 1–1.5kg, it is a useful size for a family roast without committing to a whole shoulder.

How does lamb shoulder compare with leg?
Shoulder has more connective tissue and natural fat, so it rewards longer, gentler cooking and develops a rich, yielding texture.
Leg has a different muscle structure and is better suited to a more traditional roast where you want firmer slices and shorter cooking.
If you enjoy lamb that becomes deeply succulent and easy to pull apart, shoulder is the cut to choose.
How to cook boneless half shoulder of lamb
Take the joint out of the fridge around 45–60 minutes before cooking. Pat it dry, season generously and leave the butcher’s string in place while it cooks.
For a classic slow roast, cook gently until the connective tissue has softened and the meat yields easily when tested with a skewer or fork. Shoulder is not a cut that benefits from rushing; time at a moderate temperature allows the fat to render and the texture to become succulent.
Rest the joint for at least 20 minutes before removing the string and carving. For a more pulled texture, cook until it separates easily with forks.

Yes. Freeze promptly while cold and tightly wrapped, then defrost thoroughly in the refrigerator before cooking.
