Lincoln Red is one of Britain’s established native beef breeds: deep red cattle, traditionally associated with Lincolnshire, valued for hardiness, easy fleshing and beef with good flavour and marbling.
A traditional native breed
The Lincoln Red Cattle Society describes the breed as one of the oldest native beef breeds in the UK. The cattle were historically dual-purpose, but today are bred primarily for beef.
They are known for thriving in a range of grazing systems and for producing well-fleshed cattle with an even finish.
What that can mean for the beef
Breed alone never guarantees eating quality, but Lincoln Red is associated with good marbling, tenderness and flavour.
For SteakHolder, the individual animal still matters: provenance, conformation, fat cover, ageing and butchery all contribute to the final result.
Why it suits SteakHolder
SteakHolder is about buying selectively rather than simply buying by breed name. A Lincoln Red animal with the right conformation and finish gives us the opportunity to dry-age the rib, loin and rump together and then release the cuts from that individual animal.
From breed to individual animal
The breed gives us useful context, but it is only part of the decision. We select the individual beef for its finish and suitability for ageing, then show the details of that animal as part of the release.
That means SteakHolder can remain selective rather than treating every animal of a particular breed as interchangeable.
Lincoln Red · RR001
Our current release consists of two roastings from the same Lincoln Red animal. The rib, loin and rump are being salt-aged together and released in finite numbers rather than as standard stock.
