Wild, North Yorkshire, Pigeon Breast Fillets

These are whole breast fillets from wild pigeons shot on local North Yorkshire estates.

 

Pigeon breast can be pan-fried allowing just a few minutes on each side to brown the outside and leave the middle pink.

Cooking pigeon breast sous vide ensures a beautifully tender and moist meat every time. Cooking sous vide also keeps the flavour and nutrients in the meat, resulting in beautiful flavourful meat. Pre-heat the water to 58c and put the pigeon breasts in for 15-20 minutes. Take from the bag and pan fry to brown the outside.

They are mostly available between October and January and their rich, gamey taste makes them ideal for serving with ingredients such as mushrooms, butter beans and cobnuts.

Cherries go very well with wild pigeon. The sweetness of fruit contrasts with the bird’s rich flavour. Most sweet flavours will work well with wild pigeon.

Wild pigeon is a fantastic meat to use for an extra special Sunday lunch.

We prepare your order in our butchery on the day before delivery to ensure that everything reaches you in the best condition.

We deliver on a next day service throughout the UK mainland (please see below for restrictions). Your order is shipped in an insulated box.

Our delivery service allows you to pick a delivery date in advance when you reach the checkout. Our delivery days are Tuesday to Friday.

We use a courier service. They will notify you on the morning of delivery with an estimated time for delivery.

Delivery is free on orders over £45. (under £45 = £9.95)
