Goosnargh duck is a cross between Aylesbury and Peking, giving the best meat to bone balance with a good breast weight in particular. The birds are usually 56 days old when ready to be prepped. The ducks are dry-plucked for a crispier skin then the flavour is developed by hanging the birds overnight.
They’re from one of the only farms in the country that grow and mix the food for their birds on their own land. This is the farm where the birds live in small flocks with more than twice the amount of recommended living space. It’s the farm where the animals are never in a vehicle for longer than nine minutes.
Weight is between 2.25kg and 2.7kg

Our butchers tips
The famous Goosnargh duck is supplied to the finest chefs around the country including Nigel Howarth of Northcote Manor, Mark Hix of Hix Restaurants, Chris and Jeff Galvin of Galvin Restaurants and Sydney Aldridge of Fortnum and Mason; confirming the quality of the poultry is second to none.
What makes Johnson & Swarbrick different is the way they rear their birds and the feed process. They have their own mixing plant, running 5 days a week, to know exactly what they’re feeding the birds.
No genetic modifications – No growth promoters, no antibiotics or any other additives included. These passionate farmers have created their own unique recipe promoting slow growth. The birds all arrive to the farm at one day old. They are put into nursery sheds that are heated to the specified temperature for 21-28 days. At this stage they are moved to the adult sheds which are open, spacious, well aired with plenty of room to run freely. They are bedded daily with fresh barley straw and miscanthus (a revolutionary biomass crop), this is grown on the farm.

We prepare your order in our butchery on the day before delivery to ensure that everything reaches you in the best condition.
UK MAINLAND DELIVERIES
We deliver on a next day service throughout the UK mainland (please see below for restrictions). Your order is shipped in an insulated box.
Our delivery service allows you to pick a delivery date in advance when you reach the checkout. We are currently trying to restrict our delivery days to Wednesday, Thursday & Friday to enable us to plan efficiently. If you prefer a different day please get in touch and we’ll do our very best to help.
Delivery is free on orders over £45.
Unfortunately we are unable, currently, to provide a delivery service to some areas in Scotland. This is due to the time sensitive nature of our products which must be delivered in 24 hours. These are:

The post codes included are the following: HG1, HG2, HG3, HG4, LS21, LS29, BD20, BD23.
