Prime rib steak, also known as a standing rib roast, is a cut of beef that comes from the rib section of the animal. It is considered to be one of the most flavourful and tender cuts of beef, making it a popular choice for special occasions and fine dining.

The prime rib is typically cut from the beef rib primal, which is located between the chuck and the loin. This cut includes the ribeye, which is a boneless cut, and the bone-in prime rib. The bone-in prime rib is considered to be the most flavourful, as the bone helps to retain moisture and flavour during cooking.

Native breed prime rib has a good amount of marbling, making it tender and full of flavour. The roast should also have a good amount of fat on the outside, which will help to keep it moist during cooking.

Prime rib is typically cooked by roasting it in the oven, reverse sear or slow on a BBQ. The steak can be seasoned with a variety of herbs and spices, such as garlic, rosemary, and thyme, and then slow-roasted at a low temperature for several hours. This method of cooking helps to break down the connective tissue in the meat, making it incredibly tender and juicy.

One of the most important things to keep in mind when cooking a prime rib is to let it rest before carving. This allows the juices to redistribute throughout the meat, ensuring that every bite is as flavourful and juicy as possible.

When it comes to serving prime rib, it is typically carved into thick slices and served with a variety of side dishes, such as roasted vegetables or mashed potatoes. It is also often accompanied by a rich, full-bodied red wine, such as a Cabernet Sauvignon or a Syrah.
